These Cajun-Style Smoked Sausages bring the heat and depth of Louisiana flavour straight to your plate. Made with Tender Gourmet Butchery’s smoked sausages, they’re seared until golden and served with a creamy corn and potato salad for the perfect balance of spice and comfort.
This is a great option for a hearty winter feed or an easy weeknight dinner with a southern twist.
1. Ingredients

For the Sausages:
- 4 Tender Gourmet Butchery Smoked Sausages or any other gourmet sausages)
- 1 tablespoon olive oil
- Optional: chopped parsley or spring onion for garnish
For the Corn & Potato Salad:
- 500g baby potatoes, halved
- 1 cup corn kernels (fresh or frozen)
- 1 small red onion, finely diced
- ⅓ cup whole egg mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon apple cider vinegar
- Salt & pepper to taste
- 1 tablespoon chopped parsley

Boil the Potatoes:
- Place halved baby potatoes in salted water. Boil for 10–12 minutes or until tender. Drain and let cool slightly..
Cook the Sausages:
- While potatoes are cooling, heat oil in a pan over medium heat.
- Cook sausages for 6–8 minutes, turning occasionally until browned and heated through. Set aside to rest.
Make the Salad:
- In a bowl, combine cooled potatoes, corn, red onion, mayonnaise, mustard, vinegar, salt, pepper, and parsley. Toss well.
Serve:
- Plate sausages with a generous scoop of corn and potato salad. Garnish with extra herbs if desired.
