A Juicy Roast with Gourmet Sausage & Herb Filling

This Sausage & Herb Stuffed Pork Loin Roast is pure comfort food with a gourmet twist. Featuring Tender Gourmet Butchery’s premium sausages as the hero stuffing, this dish is juicy, flavour-packed, and perfect for entertaining.
Wrapped and roasted to golden perfection, it’s a beautiful centrepiece for Sunday lunch or a holiday feast.
1. Ingredients

- 1.5kg Tender Gourmet Butchery Boneless Pork Loin
- 4 Tender Gourmet Butchery Sausages (any gourmet variety – e.g., fennel & garlic or traditional herb)
- 1 small onion, finely diced
- 1 garlic clove, minced
- 1 tablespoon olive oil
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon parsley, chopped
- Salt & pepper
- Butcher’s twine

Let’s get cooking! Follow these steps for a tender roast with a flavour-packed centre.
Prepare the Stuffing:
- Remove sausage meat from casings.
- Heat oil in a pan and sauté onion and garlic until soft.
- Add sausage meat, thyme, parsley, salt, and pepper. Cook for 5 minutes, breaking up the meat. Let cool slightly.
Prepare the Pork
- Butterfly the pork loin (or ask your butcher to do it).
- Lay the sausage filling along the centre. Roll the pork tightly and tie with butcher’s twine every 3–4 cm.
Roast
- Preheat oven to 180°C
- Place pork in a roasting pan. Roast for 1 hour 15 minutes, or until the internal temperature reaches 70°C.
- Rest for 10–15 minutes before slicing.
Cooking Tips:
- Sear the roast in a pan before baking for an extra golden crust.
- Add apple slices or dried cranberries to the stuffing for a sweet contrast.
- Serve with roasted vegetables or apple sauce.
