1. Ingredients

For the Steaks:
- 2 Tender Gourmet Butchery Beef Steaks (Ribeye, Sirloin, or Scotch Fillet)
- 1 tablespoon ground wattleseed
- ½ teaspoon ground pepperberry
- ½ teaspoon smoked paprika
- ½ teaspoon sea salt
- 1 tablespoon olive oil
- 1 teaspoon butter
For the Sweet Potato Mash:
- 2 medium sweet potatoes, peeled and cubed
- 1 tablespoon butter
- ¼ cup milk or cream
- ½ teaspoon salt
- ¼ teaspoon ground nutmeg (optional)

Let’s get cooking! Follow these steps for a perfectly crusted steak with silky smooth mash.
- Prepare the Steak Rub: In a small bowl, mix wattleseed, pepperberry, smoked paprika, and salt. Coat both sides of the steaks evenly with the spice blend.
- Cook the Sweet Potato:
- Bring a pot of salted water to a boil. Add sweet potato cubes and cook until soft (about 12-15 minutes).
- Drain and mash with butter, milk (or cream), salt, and nutmeg until smooth.
- Sear the Steaks:
- Heat olive oil in a heavy skillet or grill pan over medium-high heat.
- Add steaks and sear for 3-4 minutes per side (for medium-rare).
- In the last minute of cooking, add butter to the pan, basting the steaks for extra flavour.
- Rest & Serve:
- Let the steaks rest for 5 minutes before slicing.
