1. Ingredients

  • 1.5kg Tender Gourmet Butchery Boneless Pork Loin
  • 4 Tender Gourmet Butchery Sausages (any gourmet variety – e.g., fennel & garlic or traditional herb)
  • 1 small onion, finely diced
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon parsley, chopped
  • Salt & pepper
  • Butcher’s twine

2. Instructions

Let’s get cooking! Follow these steps for a tender roast with a flavour-packed centre.

Prepare the Stuffing:

  • Remove sausage meat from casings.
  • Heat oil in a pan and sauté onion and garlic until soft.
  • Add sausage meat, thyme, parsley, salt, and pepper. Cook for 5 minutes, breaking up the meat. Let cool slightly.

Prepare the Pork

  • Butterfly the pork loin (or ask your butcher to do it).
  • Lay the sausage filling along the centre. Roll the pork tightly and tie with butcher’s twine every 3–4 cm.

Roast

  • Preheat oven to 180°C
  • Place pork in a roasting pan. Roast for 1 hour 15 minutes, or until the internal temperature reaches 70°C.
  • Rest for 10–15 minutes before slicing.

Cooking Tips:

  • Sear the roast in a pan before baking for an extra golden crust.
  • Add apple slices or dried cranberries to the stuffing for a sweet contrast.
  • Serve with roasted vegetables or apple sauce.
